  • Almond milk - 250 milliliters
  • Maple syrup - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Ground cinnamon - 1/2 teaspoon
  • Fresh fruit (for serving) - 100 grams

Steps

  1. In a large mixing bowl, combine the semolina, all-purpose flour, baking powder, salt, and ground cinnamon.
  2. In a separate bowl, whisk together the almond milk and maple syrup until well combined.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Let the batter sit for about 10 minutes to thicken.
  4. Heat a non-stick skillet over medium heat and add a little olive oil to grease the pan.
  5. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 3-4 minutes on one side until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
  6. Repeat with the remaining batter, adding more oil to the skillet as needed.
