- Almond milk - 250 milliliters
- Maple syrup - 2 tablespoons
- Olive oil - 2 tablespoons
- Ground cinnamon - 1/2 teaspoon
- Fresh fruit (for serving) - 100 grams
Steps
- In a large mixing bowl, combine the semolina, all-purpose flour, baking powder, salt, and ground cinnamon.
- In a separate bowl, whisk together the almond milk and maple syrup until well combined.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Let the batter sit for about 10 minutes to thicken.
- Heat a non-stick skillet over medium heat and add a little olive oil to grease the pan.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 3-4 minutes on one side until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve the pancakes warm, topped with fresh fruit and an extra drizzle of maple syrup if desired.
