- all-purpose flour - 250 grams
- warm water - 150 ml
- active dry yeast - 7 grams
- olive oil - 2 tablespoons
- sugar - 1 teaspoon
- salt - 1 teaspoon
- sesame seeds - 50 grams
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
Steps
- In a bowl, dissolve the sugar and yeast in warm water and let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine the flour, salt, ground cumin, and ground coriander.
- Make a well in the center of the dry ingredients and add the yeast mixture along with the olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- After the dough has risen, punch it down and divide it into 6 equal pieces.
- Shape each piece into a ball and then flatten slightly to form a disc.
- Dip the top of each disc into a plate of sesame seeds to coat.
- Place the discs on a baking tray lined with parchment paper, cover, and let them rise for another 15 minutes.
- Preheat the oven to 200°C (392°F).
- Bake the pastries for 15-20 minutes or until golden brown on top.
- Remove from the oven and let cool slightly before serving.
