Ingredients

  • all-purpose flour - 250 grams
  • warm water - 150 ml
  • active dry yeast - 7 grams
  • olive oil - 2 tablespoons
  • sugar - 1 teaspoon
  • salt - 1 teaspoon
  • sesame seeds - 50 grams
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon

Steps

  1. In a bowl, dissolve the sugar and yeast in warm water and let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine the flour, salt, ground cumin, and ground coriander.
  3. Make a well in the center of the dry ingredients and add the yeast mixture along with the olive oil.
  4. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  6. After the dough has risen, punch it down and divide it into 6 equal pieces.
  7. Shape each piece into a ball and then flatten slightly to form a disc.
  8. Dip the top of each disc into a plate of sesame seeds to coat.
  9. Place the discs on a baking tray lined with parchment paper, cover, and let them rise for another 15 minutes.
  10. Preheat the oven to 200°C (392°F).
  11. Bake the pastries for 15-20 minutes or until golden brown on top.
  12. Remove from the oven and let cool slightly before serving.
