Ingredients

  • Zucchini - 2 medium
  • Cherry tomatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles). Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic to the skillet and cook for an additional minute, stirring frequently to avoid burning.
  4. Add the cherry tomatoes to the skillet, along with cumin, paprika, salt, and black pepper. Cook for 8-10 minutes, stirring occasionally, until the tomatoes start to break down and create a sauce.
  5. Add the zucchini noodles to the skillet and toss them with the tomato sauce. Cook for another 3-5 minutes until the zoodles are tender yet still firm.
  6. Remove from heat and stir in the chopped fresh basil and lemon juice. Adjust seasoning if necessary.
  7. Serve immediately, garnished with additional basil if desired.
