- Cherry tomatoes - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 10 grams, chopped
- Lemon juice - 1 tablespoon
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles). Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic to the skillet and cook for an additional minute, stirring frequently to avoid burning.
- Add the cherry tomatoes to the skillet, along with cumin, paprika, salt, and black pepper. Cook for 8-10 minutes, stirring occasionally, until the tomatoes start to break down and create a sauce.
- Add the zucchini noodles to the skillet and toss them with the tomato sauce. Cook for another 3-5 minutes until the zoodles are tender yet still firm.
- Remove from heat and stir in the chopped fresh basil and lemon juice. Adjust seasoning if necessary.
- Serve immediately, garnished with additional basil if desired.
