Ingredients

  • Zucchini - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Moroccan spice blend - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 2 tablespoons, chopped
  • Ground turkey or chicken - 200 grams

Steps

  1. Using a spiralizer, create zucchini noodles from the two medium zucchinis and set aside.
  2. In a large skillet, heat the olive oil over medium heat and sauté the diced onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the ground turkey or chicken, cooking until browned and fully cooked, approximately 5-7 minutes.
  5. Add the canned diced tomatoes, tomato paste, Moroccan spice blend, salt, and black pepper to the skillet, stirring to combine.
  6. Simmer the sauce for 10 minutes, allowing the flavors to meld and the sauce to thicken.
  7. In the last few minutes of cooking, add the zucchini noodles to the skillet, tossing to coat them with the sauce and heat through, about 2-3 minutes.
  8. Remove from heat, stir in the fresh basil, and serve warm.
