Ingredients

  • Zucchini - 2 medium (about 400 g)
  • Merguez sausages - 250 g
  • Red bell pepper - 1 medium (about 150 g), diced
  • Onion - 1 small (about 100 g), diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create zucchini noodles. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until soft, about 5 minutes.
  3. Add the minced garlic, cumin, and paprika to the skillet, stirring for about 1 minute until fragrant.
  4. Remove the casings from the Merguez sausages and crumble them into the skillet. Cook until browned and cooked through, about 7-10 minutes.
  5. Once the sausage is cooked, add the zucchini noodles to the skillet, tossing gently to combine with the sausage and vegetables. Cook for an additional 3-5 minutes until the noodles are tender but still slightly crisp.
  6. Season with salt and black pepper to taste. Remove from heat and serve immediately, garnished with chopped parsley.
