Ingredients

  • Zucchini - 2 medium, spiralized
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh mint leaves - 1/2 cup, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Cherry tomatoes - 1 cup, halved
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Spiralize the zucchini into noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the spiralized zucchini noodles to the skillet and cook for about 5 minutes, stirring occasionally until they are tender but still al dente.
  5. Stir in the chopped mint leaves, lemon juice, salt, black pepper, and red pepper flakes, mixing well to combine the flavors.
  6. Add the halved cherry tomatoes and cook for an additional 2-3 minutes until the tomatoes are slightly softened.
  7. Remove from heat and sprinkle the toasted pine nuts on top before serving.
