- Lemon juice - 1 tablespoon

- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Cherry tomatoes - 1 cup, halved
- Pine nuts - 2 tablespoons, toasted
Steps
- Spiralize the zucchini into noodles and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the spiralized zucchini noodles to the skillet and cook for about 5 minutes, stirring occasionally until they are tender but still al dente.
- Stir in the chopped mint leaves, lemon juice, salt, black pepper, and red pepper flakes, mixing well to combine the flavors.
- Add the halved cherry tomatoes and cook for an additional 2-3 minutes until the tomatoes are slightly softened.
- Remove from heat and sprinkle the toasted pine nuts on top before serving.
