Ingredients

  • Zucchini - 2 medium (to make zucchini noodles)
  • Fresh figs - 150 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Bell pepper - 1 small, diced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Begin by spiralizing the zucchini to create zucchini noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped red onion, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the diced bell pepper to the skillet and cook for another 3-4 minutes until softened.
  4. Stir in the chopped figs, ground cumin, ground cinnamon, salt, and black pepper. Cook for an additional 3-4 minutes until the figs are heated through and slightly caramelized.
  5. Add the zucchini noodles to the skillet, tossing everything together. Cook for an additional 2-3 minutes until the zucchini noodles are just tender but still retain some crunch.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.
