  • Coriander (fresh) - 30 grams, chopped

  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, thinly sliced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Almonds (sliced) - 30 grams, toasted

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sliced red onion, sauté for 2-3 minutes until softened.
  3. Stir in cherry tomatoes, cumin, paprika, salt, and pepper; cook for another 5 minutes until tomatoes begin to soften.
  4. Add spiralized zucchini to the skillet and toss to combine; cook for 3-4 minutes until zucchini is tender but still al dente.
  5. Remove from heat and stir in chopped coriander and lemon juice.
  6. Plate the dish and top with toasted almonds before serving.
