- Zucchini - 1 medium, spiralized (or sliced into thin strips)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Almonds - 30 grams, sliced (for garnish)
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cumin, coriander, and paprika, cooking for 1 minute to toast the spices.
- Add the chickpeas to the skillet, season with salt and black pepper, and cook for about 5 minutes, stirring occasionally.
- Meanwhile, in a separate pot, bring water to a boil and cook the spiralized zucchini for 2-3 minutes until tender but still firm. Drain and set aside.
- Once the chickpeas are heated through, add the cooked zucchini to the skillet and drizzle with lemon juice. Toss everything together gently.
- Serve the pasta on plates, garnished with chopped parsley and sliced almonds.
