  • Zucchini - 1 medium, spiralized (or sliced into thin strips)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Almonds - 30 grams, sliced (for garnish)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the cumin, coriander, and paprika, cooking for 1 minute to toast the spices.
  4. Add the chickpeas to the skillet, season with salt and black pepper, and cook for about 5 minutes, stirring occasionally.
  5. Meanwhile, in a separate pot, bring water to a boil and cook the spiralized zucchini for 2-3 minutes until tender but still firm. Drain and set aside.
  6. Once the chickpeas are heated through, add the cooked zucchini to the skillet and drizzle with lemon juice. Toss everything together gently.
  7. Serve the pasta on plates, garnished with chopped parsley and sliced almonds.
