  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped red onion and sauté for 3-4 minutes until softened.
  3. Stir in the minced garlic, diced red bell pepper, and julienned carrot. Cook for an additional 5 minutes.
  4. Add the ground cumin, coriander, cinnamon, turmeric, salt, and black pepper to the skillet, stirring well to combine.
  5. Add the spiralized zucchini to the skillet and cook for about 5-7 minutes, tossing occasionally until the zucchini is tender but not mushy.
  6. Remove the skillet from heat and stir in the fresh parsley and lemon juice.
  7. Serve hot, topped with toasted pine nuts.
