- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped red onion and sauté for 3-4 minutes until softened.
- Stir in the minced garlic, diced red bell pepper, and julienned carrot. Cook for an additional 5 minutes.
- Add the ground cumin, coriander, cinnamon, turmeric, salt, and black pepper to the skillet, stirring well to combine.
- Add the spiralized zucchini to the skillet and cook for about 5-7 minutes, tossing occasionally until the zucchini is tender but not mushy.
- Remove the skillet from heat and stir in the fresh parsley and lemon juice.
- Serve hot, topped with toasted pine nuts.
