- Zucchini - 2 medium, spiralized
- Cherry tomatoes - 200 grams, halved
- Black olives - 100 grams, pitted and sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the diced red bell pepper and cook for another 3-4 minutes until softened.
- Add the halved cherry tomatoes, sliced black olives, cumin, paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Gently fold in the spiralized zucchini and cook for an additional 3-4 minutes until the zucchini is just tender.
- Remove from heat and stir in the chopped fresh parsley.
- Serve warm, garnished with extra parsley if desired.
