  • Zucchini - 2 medium, spiralized
  • Cherry tomatoes - 200 grams, halved
  • Black olives - 100 grams, pitted and sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the diced red bell pepper and cook for another 3-4 minutes until softened.
  4. Add the halved cherry tomatoes, sliced black olives, cumin, paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Gently fold in the spiralized zucchini and cook for an additional 3-4 minutes until the zucchini is just tender.
  6. Remove from heat and stir in the chopped fresh parsley.
  7. Serve warm, garnished with extra parsley if desired.
