- Zucchini - 2 medium, spiralized
- Shrimp - 200 grams, peeled and deveined
- Scallops - 100 grams, fresh
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 200 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add shrimp and scallops to the skillet, cooking for about 3-4 minutes until they start to turn opaque.
- Stir in the halved cherry tomatoes, paprika, cumin, salt, and pepper. Cook for another 3-5 minutes until the tomatoes soften.
- Add the spiralized zucchini to the skillet and toss everything together. Cook for an additional 2-3 minutes until the zucchini is tender but still slightly crunchy.
- Remove from heat, stir in the lemon juice, fresh parsley, and cilantro.
- Serve immediately, garnished with extra herbs if desired.
