Ingredients

  • Zucchini - 2 medium, spiralized
  • Shrimp - 200 grams, peeled and deveined
  • Scallops - 100 grams, fresh
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 200 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp and scallops to the skillet, cooking for about 3-4 minutes until they start to turn opaque.
  4. Stir in the halved cherry tomatoes, paprika, cumin, salt, and pepper. Cook for another 3-5 minutes until the tomatoes soften.
  5. Add the spiralized zucchini to the skillet and toss everything together. Cook for an additional 2-3 minutes until the zucchini is tender but still slightly crunchy.
  6. Remove from heat, stir in the lemon juice, fresh parsley, and cilantro.
