- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped red onion and sauté for about 5 minutes until it becomes translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the drained artichoke hearts to the skillet and gently stir them in with the onions and garlic.
- Sprinkle in the cumin, coriander, and paprika, and cook for an additional 3-4 minutes, allowing the spices to infuse.
- Meanwhile, spiralize the zucchini into noodles and set aside.
- Once the artichoke mixture is heated through, add the zucchini noodles to the skillet.
- Toss everything together gently for about 3-5 minutes until the zucchini is just tender but still has a bit of crunch.
- Remove from heat, drizzle with lemon juice, and season with salt and black pepper to taste.
