  • Zucchini - 2 medium
  • Carrot - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Orange zest - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Orange juice - 60 ml
  • Lemon juice - 30 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Spiralize the zucchini and carrot using a spiralizer or julienne peeler to create noodle-like shapes.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the spiralized zucchini and carrot to the skillet, and sauté for 5-7 minutes until they are tender but still slightly crisp.
  4. Stir in the orange zest, lemon zest, orange juice, and lemon juice. Cook for an additional 2-3 minutes to allow the flavors to combine.
  5. Season with salt, black pepper, and crushed red pepper flakes if using. Mix well.
  6. Remove from heat and toss in the chopped parsley before serving.
