- Orange zest - 1 teaspoon
- Lemon zest - 1 teaspoon
- Orange juice - 60 ml
- Lemon juice - 30 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Crushed red pepper flakes - 1/4 teaspoon (optional)
Steps
- Spiralize the zucchini and carrot using a spiralizer or julienne peeler to create noodle-like shapes.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the spiralized zucchini and carrot to the skillet, and sauté for 5-7 minutes until they are tender but still slightly crisp.
- Stir in the orange zest, lemon zest, orange juice, and lemon juice. Cook for an additional 2-3 minutes to allow the flavors to combine.
- Season with salt, black pepper, and crushed red pepper flakes if using. Mix well.
- Remove from heat and toss in the chopped parsley before serving.
