Ingredients

  • Zucchini - 2 medium
  • Chicken breast - 250 grams, diced
  • Dried apricots - 100 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Almonds - 30 grams, slivered (for garnish)

Steps

  1. Spiralize the zucchini to create 'zoodles' and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  4. Add the diced chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
  5. Stir in the chopped dried apricots, cumin, cinnamon, ginger, salt, and pepper. Cook for another 2-3 minutes until heated through.
  6. Add the zoodles to the skillet and toss everything together, cooking for an additional 2-3 minutes until the zoodles are just tender.
  7. Remove from heat and stir in the chopped parsley.
  8. Serve immediately, garnished with slivered almonds.
