- Zucchini - 2 medium
- Chicken breast - 250 grams, diced
- Dried apricots - 100 grams, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Almonds - 30 grams, slivered (for garnish)
Steps
- Spiralize the zucchini to create 'zoodles' and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the diced chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
- Stir in the chopped dried apricots, cumin, cinnamon, ginger, salt, and pepper. Cook for another 2-3 minutes until heated through.
- Add the zoodles to the skillet and toss everything together, cooking for an additional 2-3 minutes until the zoodles are just tender.
- Remove from heat and stir in the chopped parsley.
- Serve immediately, garnished with slivered almonds.
