  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and cook for another 3 minutes until softened.
  4. Add the diced tomatoes, cumin, paprika, salt, and black pepper, stirring to combine. Cook for 5-7 minutes until the tomatoes break down.
  5. In a small bowl, steep the saffron threads in the vegetable broth for about 5 minutes.
  6. Pour the saffron-infused broth into the skillet, bringing the mixture to a gentle simmer.
  7. Add the spiralized zucchini to the skillet, tossing gently to coat with the sauce. Cook for an additional 5-7 minutes until the zucchini is tender but still slightly crisp.
  8. Remove from heat, stir in the lemon juice, and adjust seasoning if necessary.
