Ingredients

  • Chicken breast - 250 grams, diced
  • Zucchini - 2 medium, spiralized
  • Red bell pepper - 1 medium, sliced
  • Yellow onion - 1 medium, thinly sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast to the skillet and season with salt, black pepper, cumin, coriander, and paprika. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  3. Add the sliced onion and garlic to the skillet. Sauté for another 3-4 minutes until the onion is translucent.
  4. Stir in the sliced red bell pepper and cook for an additional 2-3 minutes until slightly softened.
  5. Add the spiralized zucchini to the skillet, tossing everything together. Cook for about 2-3 minutes until the zucchini is tender but still slightly crisp.
  6. Remove from heat and stir in the lemon juice and chopped parsley before serving.
