Ingredients

  • Zucchini - 2 medium
  • Honey - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Almonds - 30 grams, sliced

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles).
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the spiralized zucchini to the skillet and cook for 3-4 minutes, stirring occasionally until they begin to soften.
  4. In a small bowl, mix the honey, cinnamon, cumin, paprika, salt, and black pepper together until well combined.
  5. Pour the honey mixture over the zucchini noodles and toss to coat them evenly. Cook for an additional 2-3 minutes.
  6. Remove from heat and stir in the lemon juice and chopped parsley.
  7. Serve the dish warm, garnished with sliced almonds on top.
