- Zucchini - 2 medium
- Honey - 3 tablespoons

- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Almonds - 30 grams, sliced
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles).
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the spiralized zucchini to the skillet and cook for 3-4 minutes, stirring occasionally until they begin to soften.
- In a small bowl, mix the honey, cinnamon, cumin, paprika, salt, and black pepper together until well combined.
- Pour the honey mixture over the zucchini noodles and toss to coat them evenly. Cook for an additional 2-3 minutes.
- Remove from heat and stir in the lemon juice and chopped parsley.
- Serve the dish warm, garnished with sliced almonds on top.
