Ingredients
- Potatoes - 300 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Phyllo pastry sheets - 6 sheets
- Butter - 50 grams, melted
Steps
- Peel and boil the potatoes in salted water for about 15-20 minutes until tender. Drain and let cool.
- In a pan, heat olive oil over medium heat, add the chopped onion and minced garlic, and sauté until golden brown, about 5 minutes.
- Mash the cooled potatoes in a bowl and mix in the sautéed onion and garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Adjust seasoning to taste.
- Preheat the oven to 180°C (350°F).
- Lay one sheet of phyllo pastry on a clean surface and brush with melted butter. Place another sheet on top and repeat the process to create a layered effect.
- Cut the layered pastry into rectangles (about 10x15 cm). Place a spoonful of the potato mixture on one end of each rectangle.
- Fold the sides over the filling and roll up tightly to form a parcel. Place seam side down on a baking tray lined with parchment paper.
- Brush the tops of the parcels with more melted butter and bake for 25-30 minutes until golden brown and crispy.
- Remove from the oven, allow to cool slightly, and serve warm.
