Ingredients

  • White fish fillets (such as cod or haddock) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 1 small
  • Carrot, grated - 1 medium
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Breadcrumbs - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until soft and translucent, about 5 minutes.
  3. Add the grated carrot, cumin, paprika, salt, and pepper to the skillet. Cook for an additional 3 minutes, stirring occasionally.
  4. While the vegetables are cooking, place the fish fillets in a food processor. Add the sautéed vegetable mixture, parsley, cilantro, lemon juice, and the egg. Blend until smooth.
  5. Transfer the mixture to a bowl and fold in the breadcrumbs until combined.
  6. Lightly grease a baking dish and pour the fish mixture into it, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the pâté is firm to the touch.
  8. Remove from the oven and let it cool for a few minutes before slicing. Serve warm or at room temperature.
