Ingredients

  • Green lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 300 milliliters

Steps

  1. Rinse the green lentils under cold water and drain.
  2. In a medium saucepan, combine the lentils and 300 milliliters of water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 20-25 minutes or until the lentils are tender. Drain any excess water if necessary.
  4. While the lentils are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  5. Add the minced garlic and grated carrot to the skillet. Cook for another 3-4 minutes until the carrot is tender.
  6. Stir in the cumin, coriander, paprika, salt, and black pepper, cooking for an additional 1 minute until fragrant.
  7. Once the lentils are cooked, add them to the skillet with the sautéed vegetables. Mix well and cook for another 5 minutes.
  8. Remove from heat and let the mixture cool slightly before transferring it to a food processor.
  9. Add the chopped parsley and lemon juice to the food processor. Blend until smooth, adjusting seasoning to taste.
  10. Transfer the pâté to a serving bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
