Ingredients
- Green lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 300 milliliters
Steps
- Rinse the green lentils under cold water and drain.
- In a medium saucepan, combine the lentils and 300 milliliters of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 20-25 minutes or until the lentils are tender. Drain any excess water if necessary.
- While the lentils are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
- Add the minced garlic and grated carrot to the skillet. Cook for another 3-4 minutes until the carrot is tender.
- Stir in the cumin, coriander, paprika, salt, and black pepper, cooking for an additional 1 minute until fragrant.
- Once the lentils are cooked, add them to the skillet with the sautéed vegetables. Mix well and cook for another 5 minutes.
- Remove from heat and let the mixture cool slightly before transferring it to a food processor.
- Add the chopped parsley and lemon juice to the food processor. Blend until smooth, adjusting seasoning to taste.
- Transfer the pâté to a serving bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
