Ingredients
- Puff pastry - 250 grams
- Chickpeas - 100 grams (cooked)
- Carrot - 1 medium (grated)
- Zucchini - 1 small (grated)
- Red bell pepper - 1 small (diced)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons (chopped)
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (390°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the grated carrot, zucchini, and diced red bell pepper to the skillet. Cook for another 5 minutes until the vegetables soften.
- Stir in the cooked chickpeas, cumin powder, coriander powder, paprika, salt, and black pepper. Cook for an additional 5 minutes, mixing well. Remove from heat and let cool slightly.
- Once the vegetable mixture has cooled, stir in the chopped parsley and lemon juice.
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut into two squares, approximately 15x15 cm each.
- Place a generous amount of the vegetable filling in the center of each pastry square. Fold the edges over to create a sealed pocket, pinching the seams to secure.
- Place the filled pastries on a baking sheet lined with parchment paper. Optionally, brush the tops with a little olive oil for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are puffed and golden brown.
- Remove from the oven and let cool slightly before serving. Enjoy warm!
