Ingredients

  • Puff pastry - 250 grams
  • Chickpeas - 100 grams (cooked)
  • Carrot - 1 medium (grated)
  • Zucchini - 1 small (grated)
  • Red bell pepper - 1 small (diced)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the grated carrot, zucchini, and diced red bell pepper to the skillet. Cook for another 5 minutes until the vegetables soften.
  4. Stir in the cooked chickpeas, cumin powder, coriander powder, paprika, salt, and black pepper. Cook for an additional 5 minutes, mixing well. Remove from heat and let cool slightly.
  5. Once the vegetable mixture has cooled, stir in the chopped parsley and lemon juice.
  6. Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut into two squares, approximately 15x15 cm each.
  7. Place a generous amount of the vegetable filling in the center of each pastry square. Fold the edges over to create a sealed pocket, pinching the seams to secure.
  8. Place the filled pastries on a baking sheet lined with parchment paper. Optionally, brush the tops with a little olive oil for a golden finish.
  9. Bake in the preheated oven for 20-25 minutes, or until the pastries are puffed and golden brown.
  10. Remove from the oven and let cool slightly before serving. Enjoy warm!
