Ingredients

  • Carrot - 100 grams, grated
  • Zucchini - 100 grams, grated
  • Potato - 100 grams, boiled and mashed
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Puff pastry sheets - 2
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the grated carrot and zucchini to the skillet and cook for about 5 minutes until they soften.
  4. Stir in the mashed potato, chopped parsley, cumin, paprika, salt, and black pepper. Mix well and cook for another 2-3 minutes. Remove from heat and let cool slightly.
  5. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 squares.
  6. Place a generous tablespoon of the vegetable mixture in the center of each pastry square.
  7. Fold the corners of the pastry over the filling to form a triangle or rectangle and press the edges to seal.
  8. Place the filled pastries on a baking sheet lined with parchment paper. Brush the tops with a little olive oil and sprinkle with sesame seeds.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
