Ingredients

  • Zucchini - 300 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Bread crumbs - 50 grams

Steps

  1. Start by grating the zucchini and place it in a clean kitchen towel, then squeeze out the excess moisture.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  4. In a large bowl, combine the grated zucchini, sautéed onion and garlic, chopped parsley, chopped mint, ground cumin, ground coriander, salt, and black pepper. Mix well.
  5. Add the beaten egg and bread crumbs to the mixture, combining until fully incorporated.
  6. Preheat your oven to 180°C (350°F).
  7. Grease a small baking dish with the remaining olive oil and transfer the zucchini mixture into the dish, smoothing the top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and set.
  9. Allow the pâté to cool slightly before serving, either warm or at room temperature.
