- Zucchini - 300 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten
- Bread crumbs - 50 grams
Steps
- Start by grating the zucchini and place it in a clean kitchen towel, then squeeze out the excess moisture.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
- In a large bowl, combine the grated zucchini, sautéed onion and garlic, chopped parsley, chopped mint, ground cumin, ground coriander, salt, and black pepper. Mix well.
- Add the beaten egg and bread crumbs to the mixture, combining until fully incorporated.
- Preheat your oven to 180°C (350°F).
- Grease a small baking dish with the remaining olive oil and transfer the zucchini mixture into the dish, smoothing the top.
- Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and set.
- Allow the pâté to cool slightly before serving, either warm or at room temperature.
