Ingredients

  • Ground beef - 250 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Mixed olives (green and black) - 100 grams, pitted
  • Capers - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 1 tablespoon, chopped
  • Arugula - 30 grams

Steps

  1. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  2. In a bowl, combine ground beef, sautéed garlic, cumin, paprika, salt, and pepper. Mix well and form into 2 equal patties.
  3. Preheat a grill or skillet over medium-high heat and cook the patties for about 4-5 minutes on each side, or until cooked to your desired doneness.
  4. While the burgers are cooking, prepare the olive tapenade by blending the mixed olives, capers, lemon juice, and chopped parsley in a food processor until coarsely chopped.
  5. Once the burgers are cooked, assemble the burgers by placing each patty on a whole wheat bun, topping them generously with olive tapenade and a handful of arugula.
  6. Serve immediately with a side salad or baked sweet potato fries.
