Ingredients

  • Black olives - 100 grams
  • Green olives - 100 grams
  • Capers - 25 grams
  • Garlic - 1 clove
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Black pepper - to taste

Steps

  1. Rinse the black and green olives under cold water to remove excess salt and drain well.
  2. In a food processor, combine the black olives, green olives, capers, and garlic.
  3. Pulse the mixture until it is coarsely chopped.
  4. Add the fresh parsley, lemon juice, and olive oil to the food processor.
  5. Pulse again until the mixture is well combined but still slightly chunky.
  6. Season with black pepper to taste.
  7. Transfer the tapenade to a bowl and let it sit for at least 10 minutes to allow flavors to meld.
