Ingredients

  • Basmati rice - 150 grams
  • Green olives, pitted and sliced - 80 grams
  • Black olives, pitted and sliced - 40 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Vegetable broth - 300 ml
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the pot and sauté for an additional 1 minute until fragrant.
  4. Stir in the cumin, cinnamon, and paprika, cooking for another minute to toast the spices.
  5. Add the rinsed rice to the pot, stirring to coat the grains with the oil and spices.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, remove the pot from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork and gently stir in the sliced green and black olives along with the chopped parsley.
  9. Season with salt to taste, then serve warm.
