Ingredients

  • Almond flour - 100g
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Feta cheese - 75g, crumbled
  • Black olives - 50g, pitted and sliced
  • Green olives - 50g, pitted and sliced
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the almond flour, baking powder, and salt.
  3. Add the egg and olive oil to the dry ingredients, mixing until a dough forms.
  4. Roll out the dough between two sheets of parchment paper to about 1/2 cm thickness.
  5. Transfer the rolled-out dough to the prepared baking tray.
  6. Evenly spread the crumbled feta cheese, sliced black olives, and green olives over the dough.
  7. Sprinkle dried oregano, fresh parsley, and red pepper flakes on top of the flatbread.
  8. Bake in the preheated oven for 15-18 minutes or until the edges are golden brown.
  9. Remove from the oven and let it cool slightly before slicing.
  10. Serve warm and enjoy!
