Ingredients

  • 1 cup cooked quinoa - 240 ml
  • 1/2 cup almonds, finely chopped - 75 g
  • 1/2 cup green olives, pitted and chopped - 75 g
  • 1/2 cup breadcrumbs - 60 g
  • 1 small onion, finely diced - 100 g
  • 2 cloves garlic, minced - 6 g
  • 1 tsp ground cumin - 2 g
  • 1 tsp ground coriander - 2 g
  • 1/2 tsp paprika - 1 g
  • 1/4 tsp cayenne pepper - 0.5 g
  • 2 tbsp fresh parsley, chopped - 8 g
  • 2 tbsp olive oil - 30 ml
  • Salt to taste - 1 g
  • Black pepper to taste - 1 g
  • 2 whole wheat burger buns - 140 g
  • 1/2 cucumber, sliced - 100 g
  • 2 tbsp tahini - 30 g
  • 1 tbsp lemon juice - 15 ml

Steps

  1. In a large bowl, combine the cooked quinoa, chopped almonds, chopped olives, breadcrumbs, diced onion, minced garlic, cumin, coriander, paprika, cayenne pepper, and parsley.
  2. Mix all the ingredients well and season with salt and black pepper to taste.
  3. Form the mixture into two equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
  6. While the patties are cooking, prepare the cucumber-tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl. Add water as needed to reach a drizzle-able consistency.
  7. Toast the burger buns in the skillet for 1-2 minutes until lightly crisp.
  8. Assemble the burgers by placing the patties on the buns, topping them with sliced cucumber, and drizzling with the cucumber-tahini sauce.
