  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 300 grams, sliced
  • Canned chickpeas - 1 can (400 grams), drained and rinsed
  • Diced tomatoes - 1 can (400 grams)
  • Vegetable broth - 200 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a tagine or large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the diced carrot and bell pepper, cooking for another 5 minutes until slightly softened.
  5. Add the zucchini and mushrooms, stirring well, and cook until the mushrooms are tender, about 5-7 minutes.
  6. Stir in the chickpeas, diced tomatoes, vegetable broth, cumin, coriander, cinnamon, paprika, salt, and black pepper.
  7. Bring the mixture to a gentle simmer, then cover and cook for 15-20 minutes, allowing the flavors to meld.
  8. Remove from heat and stir in the chopped parsley before serving.
