- Canned chickpeas - 1 can (400 grams), drained and rinsed
- Diced tomatoes - 1 can (400 grams)
- Vegetable broth - 200 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a tagine or large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced carrot and bell pepper, cooking for another 5 minutes until slightly softened.
- Add the zucchini and mushrooms, stirring well, and cook until the mushrooms are tender, about 5-7 minutes.
- Stir in the chickpeas, diced tomatoes, vegetable broth, cumin, coriander, cinnamon, paprika, salt, and black pepper.
- Bring the mixture to a gentle simmer, then cover and cook for 15-20 minutes, allowing the flavors to meld.
- Remove from heat and stir in the chopped parsley before serving.
