Ingredients
- Whole wheat flour - 150 grams
- Warm water - 100 ml
- Active dry yeast - 5 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Button mushrooms - 150 grams, sliced
- Fresh thyme leaves - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, thinly sliced
- Cumin powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms, about 5-7 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes, or until it has doubled in size.
- Preheat the oven to 220°C (428°F).
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and cook until translucent, about 3 minutes.
- Add the minced garlic, sliced mushrooms, cumin, paprika, and black pepper. Cook until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes. Stir in the fresh thyme and remove from heat.
- Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a flat round shape about 1/4 inch thick.
- Place the flatbreads on a baking sheet lined with parchment paper. Spread the mushroom mixture evenly over each flatbread.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
