Ingredients

  • Whole wheat flour - 150 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Button mushrooms - 150 grams, sliced
  • Fresh thyme leaves - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, thinly sliced
  • Cumin powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine whole wheat flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms, about 5-7 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes, or until it has doubled in size.
  4. Preheat the oven to 220°C (428°F).
  5. In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and cook until translucent, about 3 minutes.
  6. Add the minced garlic, sliced mushrooms, cumin, paprika, and black pepper. Cook until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes. Stir in the fresh thyme and remove from heat.
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a flat round shape about 1/4 inch thick.
  8. Place the flatbreads on a baking sheet lined with parchment paper. Spread the mushroom mixture evenly over each flatbread.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  10. Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
