Ingredients

  • Pizza dough - 200 grams
  • Mixed mushrooms (shiitake, cremini, and button) - 150 grams, sliced
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine sliced mushrooms, red onion, garlic, olive oil, cumin, paprika, coriander, salt, and pepper. Mix well to coat the vegetables.
  3. Spread the mushroom mixture on a baking sheet and roast in the oven for about 10 minutes until the mushrooms are tender and slightly golden.
  4. While the mushrooms are roasting, prepare the chermoula sauce by mixing fresh cilantro, fresh parsley, lemon juice, and additional olive oil in a small bowl. Set aside.
  5. Roll out the pizza dough on a floured surface to your desired thickness (about 0.5 cm). Transfer to a baking tray lined with parchment paper.
  6. Once the mushrooms are ready, spread them evenly over the pizza dough. Drizzle the chermoula sauce on top, and sprinkle with vegan cheese if using.
  7. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  8. Remove from the oven, let cool for a couple of minutes, then slice and serve hot.
