- Pizza dough - 200 grams
- Mixed mushrooms (shiitake, cremini, and button) - 150 grams, sliced
- Olive oil - 2 tablespoons
- Red onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander powder - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine sliced mushrooms, red onion, garlic, olive oil, cumin, paprika, coriander, salt, and pepper. Mix well to coat the vegetables.
- Spread the mushroom mixture on a baking sheet and roast in the oven for about 10 minutes until the mushrooms are tender and slightly golden.
- While the mushrooms are roasting, prepare the chermoula sauce by mixing fresh cilantro, fresh parsley, lemon juice, and additional olive oil in a small bowl. Set aside.
- Roll out the pizza dough on a floured surface to your desired thickness (about 0.5 cm). Transfer to a baking tray lined with parchment paper.
- Once the mushrooms are ready, spread them evenly over the pizza dough. Drizzle the chermoula sauce on top, and sprinkle with vegan cheese if using.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven, let cool for a couple of minutes, then slice and serve hot.
