Ingredients

  • Semolina - 50 grams
  • Warm water - 150 milliliters
  • Salt - 1 teaspoon
  • Active dry yeast - 1 teaspoon
  • Olive oil - 2 tablespoons (for dough)
  • Butter - 2 tablespoons (for layering)
  • Honey - 4 tablespoons (for serving)

Steps

  1. In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour, semolina, and salt. Add the yeast mixture and mix until a dough forms.
  3. Knead the dough for about 5-7 minutes until it becomes smooth. Divide the dough into 4 equal balls.
  4. Coat each ball with olive oil and cover with a damp cloth. Let them rest for 15 minutes.
  5. On a lightly floured surface, flatten each ball into a thin disc. Brush the surface with melted butter and fold it into a square.
  6. Heat a non-stick skillet over medium heat. Once hot, cook each folded square for about 3-4 minutes on each side until golden brown and crispy.
  7. Remove from the skillet and keep warm. Repeat the process with the remaining dough.
  8. Serve the warm msemmen drizzled with honey.
