- Semolina - 50 grams
- Warm water - 150 milliliters
- Salt - 1 teaspoon
- Active dry yeast - 1 teaspoon
- Olive oil - 2 tablespoons (for dough)
- Butter - 2 tablespoons (for layering)
- Honey - 4 tablespoons (for serving)
Steps
- In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour, semolina, and salt. Add the yeast mixture and mix until a dough forms.
- Knead the dough for about 5-7 minutes until it becomes smooth. Divide the dough into 4 equal balls.
- Coat each ball with olive oil and cover with a damp cloth. Let them rest for 15 minutes.
- On a lightly floured surface, flatten each ball into a thin disc. Brush the surface with melted butter and fold it into a square.
- Heat a non-stick skillet over medium heat. Once hot, cook each folded square for about 3-4 minutes on each side until golden brown and crispy.
- Remove from the skillet and keep warm. Repeat the process with the remaining dough.
- Serve the warm msemmen drizzled with honey.
