  • All-purpose flour - 250 grams
  • Semolina - 50 grams
  • Warm water - 180 ml
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Butter - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Black sesame seeds - 1 teaspoon (optional)

Steps

  1. In a large bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a soft dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. Divide the dough into 4 equal portions. Shape each portion into a ball and flatten slightly.
  4. On a clean surface, spread a little olive oil and butter. Take one dough ball and stretch it out into a thin, flat circle, about 25 cm in diameter.
  5. Sprinkle a quarter of the crumbled feta and shredded mozzarella cheese evenly over the stretched dough. Optionally, add black sesame seeds for extra flavor.
  6. Fold the edges of the dough inward to enclose the cheese, creating a square or rectangular shape. Repeat with the remaining dough and filling.
  7. Heat a non-stick skillet over medium heat and add a little olive oil. Cook each msemmen for about 3-4 minutes on each side until golden brown and crispy.
