- All-purpose flour - 250 grams
- Semolina - 50 grams
- Warm water - 180 ml
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Black sesame seeds - 1 teaspoon (optional)
Steps
- In a large bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Divide the dough into 4 equal portions. Shape each portion into a ball and flatten slightly.
- On a clean surface, spread a little olive oil and butter. Take one dough ball and stretch it out into a thin, flat circle, about 25 cm in diameter.
- Sprinkle a quarter of the crumbled feta and shredded mozzarella cheese evenly over the stretched dough. Optionally, add black sesame seeds for extra flavor.
- Fold the edges of the dough inward to enclose the cheese, creating a square or rectangular shape. Repeat with the remaining dough and filling.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook each msemmen for about 3-4 minutes on each side until golden brown and crispy.
