Ingredients

  • Msemmen dough - 200 grams
  • Olive oil - 2 tablespoons
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Bell pepper - 1 small, diced
  • Red onion - 1 small, thinly sliced
  • Black olives - 50 grams, sliced
  • Spinach - 50 grams, fresh
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the msemmen dough by mixing 200g of flour, 1 teaspoon of salt, and enough water to form a soft dough. Knead for 5-10 minutes, then let it rest for 15 minutes.
  2. Divide the rested dough into 2 equal pieces. Roll each piece into a thin circle (about 20 cm in diameter) on a lightly floured surface.
  3. Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Cook each rolled dough for 2-3 minutes per side until golden and crispy. Remove and set aside.
  4. In the same pan, spread 50g of tomato sauce evenly over each msemmen base. Sprinkle 50g of shredded mozzarella cheese on top.
  5. Layer the diced bell pepper, sliced red onion, black olives, and fresh spinach evenly over the cheese. Season with oregano, salt, and black pepper.
  6. Cover the pan and cook on low heat for about 5-7 minutes until the cheese is melted and the vegetables are tender.
  7. Remove from heat, slice into wedges, and serve hot, drizzled with the remaining olive oil.
