- Msemmen dough - 200 grams
- Olive oil - 2 tablespoons
- Tomato sauce - 100 grams
- Mozzarella cheese - 100 grams, shredded
- Bell pepper - 1 small, diced
- Red onion - 1 small, thinly sliced
- Black olives - 50 grams, sliced
- Spinach - 50 grams, fresh
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Prepare the msemmen dough by mixing 200g of flour, 1 teaspoon of salt, and enough water to form a soft dough. Knead for 5-10 minutes, then let it rest for 15 minutes.
- Divide the rested dough into 2 equal pieces. Roll each piece into a thin circle (about 20 cm in diameter) on a lightly floured surface.
- Heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Cook each rolled dough for 2-3 minutes per side until golden and crispy. Remove and set aside.
- In the same pan, spread 50g of tomato sauce evenly over each msemmen base. Sprinkle 50g of shredded mozzarella cheese on top.
- Layer the diced bell pepper, sliced red onion, black olives, and fresh spinach evenly over the cheese. Season with oregano, salt, and black pepper.
- Cover the pan and cook on low heat for about 5-7 minutes until the cheese is melted and the vegetables are tender.
- Remove from heat, slice into wedges, and serve hot, drizzled with the remaining olive oil.
