Ingredients

  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Honey - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Chopped nuts (almonds or walnuts) - 30 grams
  • Fresh mint leaves - a handful (for garnish)

Steps

  1. In a large bowl, mix the all-purpose flour, semolina, baking powder, salt, and cinnamon together.
  2. Gradually add the warm water while mixing with your hands until a soft dough forms.
  3. Knead the dough for about 5 minutes until smooth, then cover and let it rest for 15 minutes.
  4. Divide the dough into 4 equal pieces and shape each piece into a ball.
  5. On a lightly oiled surface, flatten each ball into a thin circle using your fingers or a rolling pin.
  6. Drizzle olive oil over each circle and sprinkle with a bit of honey and chopped nuts.
  7. Fold each circle into quarters, then flatten again gently to form a pancake shape.
  8. Heat a non-stick skillet over medium heat and cook each pancake for 3-4 minutes on each side until golden and crispy.
  9. Serve warm, garnished with fresh mint leaves and an extra drizzle of honey if desired.
