Ingredients

  • All-purpose flour - 250 grams
  • Semolina - 50 grams
  • Water - 150 ml
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Ground beef - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 30 grams, for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour, semolina, salt, and water to form a smooth dough. Knead for about 5-10 minutes until elastic, then cover and let it rest for 30 minutes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the ground beef, cumin, paprika, salt, and black pepper to the skillet. Cook until the beef is browned and cooked through, about 5-7 minutes. Stir in the chopped parsley and remove from heat to cool.
  4. Divide the rested dough into 4 equal pieces. Roll each piece into a thin circle on a lightly floured surface, about 20 cm in diameter.
  5. Spread a thin layer of the meat mixture over half of each dough circle. Fold the other half over to create a half-moon shape, sealing the edges.
  6. In a large skillet, melt the butter and remaining olive oil over medium heat. Fry each filled Msemmen for about 4-5 minutes on each side until golden brown and crispy.
  7. Serve hot, optionally with honey or jam on the side.
