Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Salt - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Butter - 2 tablespoons (melted)
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Bell pepper - 1 medium (diced)
  • Zucchini - 1 small (grated)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas - 100 grams (cooked and mashed)
  • Fresh parsley - 2 tablespoons (chopped)
  • Black pepper - 1/2 teaspoon

Steps

  1. In a large bowl, mix the flour and salt. Gradually add warm water while stirring until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  4. Add the diced bell pepper and grated zucchini to the skillet. Cook for another 5 minutes until the vegetables are tender.
  5. Stir in the cumin, paprika, mashed chickpeas, parsley, and black pepper. Cook for an additional 2 minutes, then remove from heat and let it cool.
  6. Divide the rested dough into 4 equal portions. Roll each portion into a thin circle (about 20 cm in diameter).
  7. Brush the surface of the dough with melted butter, place a generous spoonful of the vegetable mixture in the center, and fold the edges over to enclose the filling.
  8. Flatten the stuffed dough gently with your hands to form a patty.
  9. Heat remaining olive oil in a skillet over medium heat. Cook each msemmen for about 3-4 minutes on each side until golden brown and crispy.
  10. Serve warm, garnished with additional parsley if desired.
