- All-purpose flour - 250 grams
- Warm water - 150 ml
- Salt - 1 teaspoon
- Olive oil - 3 tablespoons
- Butter - 2 tablespoons (melted)
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Bell pepper - 1 medium (diced)
- Zucchini - 1 small (grated)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chickpeas - 100 grams (cooked and mashed)
- Fresh parsley - 2 tablespoons (chopped)
- Black pepper - 1/2 teaspoon
Steps
- In a large bowl, mix the flour and salt. Gradually add warm water while stirring until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced bell pepper and grated zucchini to the skillet. Cook for another 5 minutes until the vegetables are tender.
- Stir in the cumin, paprika, mashed chickpeas, parsley, and black pepper. Cook for an additional 2 minutes, then remove from heat and let it cool.
- Divide the rested dough into 4 equal portions. Roll each portion into a thin circle (about 20 cm in diameter).
- Brush the surface of the dough with melted butter, place a generous spoonful of the vegetable mixture in the center, and fold the edges over to enclose the filling.
- Flatten the stuffed dough gently with your hands to form a patty.
- Heat remaining olive oil in a skillet over medium heat. Cook each msemmen for about 3-4 minutes on each side until golden brown and crispy.
- Serve warm, garnished with additional parsley if desired.
