- Almond flour - 200g
- Psyllium husk - 2 tbsp
- Salt - 1/2 tsp
- Warm water - 150ml
- Olive oil - 2 tbsp
- Egg - 1 large
- Spinach - 100g, chopped
- Feta cheese - 100g, crumbled
- Black olives - 50g, pitted and chopped
- Cumin - 1/2 tsp
- Paprika - 1/2 tsp
- Black pepper - 1/4 tsp
Steps
- In a mixing bowl, combine almond flour, psyllium husk, salt, and warm water. Mix until a dough forms and let it rest for 10 minutes.
- In another bowl, whisk the egg, then add chopped spinach, feta cheese, black olives, cumin, paprika, and black pepper. Mix well to combine.
- Divide the dough into 4 equal portions. On a floured surface, roll each portion into a thin circle.
- Heat a pan over medium heat and add 1 tablespoon of olive oil. Place the first dough circle in the pan and cook for 2-3 minutes until golden brown, then flip and cook the other side.
- Remove the cooked flatbread from the pan and place a portion of the filling in the center. Fold the edges over the filling to create a parcel.
- Return the filled msemmen to the pan and cook for another 2-3 minutes on each side until golden and crispy. Repeat with remaining dough and filling.
- Serve warm, drizzled with a little more olive oil if desired.
