Ingredients

  • Gluten-free flour - 150 grams
  • Warm water - 100 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Amlou (almond butter) - 4 tablespoons
  • Honey - 1 tablespoon

Steps

  1. In a large mixing bowl, combine the gluten-free flour and salt. Gradually add warm water while mixing until a soft dough forms.
  2. Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. Divide the dough into 4 equal portions. On a lightly oiled surface, flatten each portion into a thin rectangle.
  4. Brush each rectangle with olive oil and sprinkle with a little more gluten-free flour. Fold the sides inwards and then roll it up tightly to form a cylinder.
  5. Gently flatten each cylinder and fold it into a square shape. Let them rest for another 5 minutes.
  6. In a non-stick skillet, melt butter over medium heat. Cook each msemmen for about 3-4 minutes on each side until golden brown and crispy.
  7. Serve the msemmen warm with amlou spread on the side and a drizzle of honey.
