Ingredients

  • All-purpose flour - 200 grams
  • Semolina - 50 grams
  • Warm water - 150 ml
  • Salt - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Cumin powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a soft dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onions and sauté until they are soft and caramelized, about 10-15 minutes.
  4. Stir in cumin, black pepper, and chopped parsley into the caramelized onions. Remove from heat and let it cool.
  5. Divide the rested dough into 4 equal portions. On a lightly floured surface, take one portion and roll it out into a thin circle, about 20 cm in diameter.
  6. Spread a spoonful of the onion mixture evenly over the dough, leaving a border around the edges. Fold the dough over the filling, then fold the edges to create a square or rectangle shape.
  7. Repeat with the remaining dough and filling. Heat the remaining tablespoon of olive oil in the skillet over medium heat.
  8. Cook each filled msemmen for about 3-4 minutes on each side, until golden brown and crispy. Repeat with the remaining msemmen.
  9. Serve warm, garnished with fresh parsley if desired.
