Ingredients
- All-purpose flour - 200 grams
- Semolina - 50 grams
- Warm water - 150 ml
- Salt - 1 teaspoon
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Cumin powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onions and sauté until they are soft and caramelized, about 10-15 minutes.
- Stir in cumin, black pepper, and chopped parsley into the caramelized onions. Remove from heat and let it cool.
- Divide the rested dough into 4 equal portions. On a lightly floured surface, take one portion and roll it out into a thin circle, about 20 cm in diameter.
- Spread a spoonful of the onion mixture evenly over the dough, leaving a border around the edges. Fold the dough over the filling, then fold the edges to create a square or rectangle shape.
- Repeat with the remaining dough and filling. Heat the remaining tablespoon of olive oil in the skillet over medium heat.
- Cook each filled msemmen for about 3-4 minutes on each side, until golden brown and crispy. Repeat with the remaining msemmen.
- Serve warm, garnished with fresh parsley if desired.
