Ingredients

  • All-purpose flour - 200g
  • Semolina - 50g
  • Warm water - 150ml
  • Salt - 1 tsp
  • Olive oil - 2 tbsp
  • Butter - 1 tbsp
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, grated
  • Carrot - 1 small, grated
  • Cumin - 1 tsp
  • Paprika - 1 tsp
  • Black pepper - 1/2 tsp
  • Fresh parsley - 2 tbsp, chopped

Steps

  1. In a large bowl, mix the all-purpose flour, semolina, and salt. Gradually add warm water while kneading until a soft dough forms. Let it rest for 30 minutes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the diced red bell pepper, grated zucchini, and carrot to the skillet. Season with cumin, paprika, black pepper, and sauté until vegetables are tender, about 5-7 minutes. Stir in chopped parsley and set aside to cool.
  4. Divide the rested dough into 4 equal portions. On a lightly floured surface, flatten one portion into a thin circle, about 10 inches in diameter.
  5. Place a spoonful of the vegetable mixture in the center of the dough circle. Fold the edges over to enclose the filling and shape it into a square.
  6. Repeat with the remaining dough and filling. Heat the remaining olive oil and butter in a skillet over medium heat.
  7. Cook each msemmen for about 3-4 minutes on each side or until golden brown and crispy. Remove from heat and keep warm.
  8. Serve hot, optionally with a side of yogurt or mint tea.
