- All-purpose flour - 200g
- Semolina - 50g
- Warm water - 150ml
- Salt - 1 tsp
- Olive oil - 2 tbsp
- Butter - 1 tbsp
- Onion - 1 medium, finely chopped
- Red bell pepper - 1, diced
- Zucchini - 1 small, grated
- Carrot - 1 small, grated
- Cumin - 1 tsp
- Paprika - 1 tsp
- Black pepper - 1/2 tsp
- Fresh parsley - 2 tbsp, chopped
Steps
- In a large bowl, mix the all-purpose flour, semolina, and salt. Gradually add warm water while kneading until a soft dough forms. Let it rest for 30 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced red bell pepper, grated zucchini, and carrot to the skillet. Season with cumin, paprika, black pepper, and sauté until vegetables are tender, about 5-7 minutes. Stir in chopped parsley and set aside to cool.
- Divide the rested dough into 4 equal portions. On a lightly floured surface, flatten one portion into a thin circle, about 10 inches in diameter.
- Place a spoonful of the vegetable mixture in the center of the dough circle. Fold the edges over to enclose the filling and shape it into a square.
- Repeat with the remaining dough and filling. Heat the remaining olive oil and butter in a skillet over medium heat.
- Cook each msemmen for about 3-4 minutes on each side or until golden brown and crispy. Remove from heat and keep warm.
- Serve hot, optionally with a side of yogurt or mint tea.
