  • Semolina - 50 grams

  • Warm water - 150 ml
  • Olive oil - 2 tablespoons (for dough)

  • Zucchini - 50 grams, grated
  • Carrot - 50 grams, grated
  • Bell pepper - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cumin powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon (for filling)
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a mixing bowl, combine the all-purpose flour, semolina, and salt.
  2. Gradually add warm water while kneading to form a smooth and elastic dough. Let it rest for 15 minutes.
  3. In a skillet over medium heat, add olive oil and sauté the onion and garlic until translucent.
  4. Add the grated zucchini, carrot, and chopped bell pepper. Cook for about 5 minutes until softened.
  5. Stir in cumin, paprika, salt, black pepper, and chopped parsley. Remove from heat and let the filling cool.
  6. Divide the rested dough into 4 equal pieces. Roll each piece into a thin circle on a lightly oiled surface.
  7. Spread a thin layer of butter over each circle, then fold them into quarters to create a square.
  8. Place a spoonful of the vegetable filling in the center of each square, then fold the corners over to enclose the filling.
  9. In a non-stick skillet, heat a little olive oil over medium heat. Cook each filled msemmen for about 3-4 minutes on each side until golden brown and crispy.
  10. Serve hot with a side of harissa or yogurt for dipping.
