- Semolina - 50 grams

- Warm water - 150 ml
- Olive oil - 2 tablespoons (for dough)
- Butter - 1 tablespoon (for dough)
- Zucchini - 50 grams, grated
- Carrot - 50 grams, grated
- Bell pepper - 50 grams, finely chopped
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Cumin powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon (for filling)
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a mixing bowl, combine the all-purpose flour, semolina, and salt.
- Gradually add warm water while kneading to form a smooth and elastic dough. Let it rest for 15 minutes.
- In a skillet over medium heat, add olive oil and sauté the onion and garlic until translucent.
- Add the grated zucchini, carrot, and chopped bell pepper. Cook for about 5 minutes until softened.
- Stir in cumin, paprika, salt, black pepper, and chopped parsley. Remove from heat and let the filling cool.
- Divide the rested dough into 4 equal pieces. Roll each piece into a thin circle on a lightly oiled surface.
- Spread a thin layer of butter over each circle, then fold them into quarters to create a square.
- Place a spoonful of the vegetable filling in the center of each square, then fold the corners over to enclose the filling.
- In a non-stick skillet, heat a little olive oil over medium heat. Cook each filled msemmen for about 3-4 minutes on each side until golden brown and crispy.
- Serve hot with a side of harissa or yogurt for dipping.
