Ingredients
- All-purpose flour - 200 grams
- Semolina - 50 grams
- Warm water - 150 ml
- Salt - 1 teaspoon
- Olive oil - 3 tablespoons
- Butter - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- In a small bowl, mix the crumbled feta cheese, chopped parsley, cumin, and black pepper. Set aside.
- Divide the dough into 4 equal portions. Roll each portion into a thin circle, about 20 cm in diameter.
- Brush the surface of each circle lightly with olive oil. Place a portion of the cheese filling in the center and fold the edges to enclose the filling, forming a square or rectangle.
- Heat a non-stick skillet over medium heat and add a little butter. Cook each stuffed msemmen for about 3-4 minutes on each side until golden brown and crispy.
- Repeat the process for the remaining dough and filling, adding more butter as needed. Serve warm.
