Ingredients

  • All-purpose flour - 200 grams
  • Semolina - 50 grams
  • Warm water - 150 ml
  • Salt - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Butter - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. In a small bowl, mix the crumbled feta cheese, chopped parsley, cumin, and black pepper. Set aside.
  4. Divide the dough into 4 equal portions. Roll each portion into a thin circle, about 20 cm in diameter.
  5. Brush the surface of each circle lightly with olive oil. Place a portion of the cheese filling in the center and fold the edges to enclose the filling, forming a square or rectangle.
  6. Heat a non-stick skillet over medium heat and add a little butter. Cook each stuffed msemmen for about 3-4 minutes on each side until golden brown and crispy.
  7. Repeat the process for the remaining dough and filling, adding more butter as needed. Serve warm.
