Ingredients
- all-purpose flour - 200 grams
- semolina - 50 grams
- warm water - 150 ml
- olive oil - 3 tablespoons
- salt - 1 teaspoon
- vegan butter (or additional olive oil) - for brushing
- sugar (optional) - for serving
Steps
- In a large mixing bowl, combine the all-purpose flour, semolina, and salt.
- Gradually add warm water while mixing until a soft dough forms.
- Knead the dough for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- Divide the dough into 4 equal pieces and shape each piece into a ball.
- On a lightly oiled surface, flatten each ball into a thin rectangle using your hands.
- Brush the surface of the rectangle lightly with olive oil or vegan butter, then fold it into thirds like a letter.
- Roll the folded dough into a spiral shape, then flatten it gently again into a disk.
- Heat a non-stick skillet over medium heat and place the flattened dough in the skillet.
- Cook for about 3-4 minutes on each side until golden brown and crispy, brushing with more oil if needed.
- Repeat the process with the remaining dough pieces.
- Serve warm, drizzled with olive oil or sprinkled with sugar, if desired.
