Ingredients

  • all-purpose flour - 200 grams
  • semolina - 50 grams
  • warm water - 150 ml
  • olive oil - 3 tablespoons
  • salt - 1 teaspoon
  • vegan butter (or additional olive oil) - for brushing
  • sugar (optional) - for serving

Steps

  1. In a large mixing bowl, combine the all-purpose flour, semolina, and salt.
  2. Gradually add warm water while mixing until a soft dough forms.
  3. Knead the dough for about 5-7 minutes until smooth and elastic.
  4. Cover the dough with a damp cloth and let it rest for 15 minutes.
  5. Divide the dough into 4 equal pieces and shape each piece into a ball.
  6. On a lightly oiled surface, flatten each ball into a thin rectangle using your hands.
  7. Brush the surface of the rectangle lightly with olive oil or vegan butter, then fold it into thirds like a letter.
  8. Roll the folded dough into a spiral shape, then flatten it gently again into a disk.
  9. Heat a non-stick skillet over medium heat and place the flattened dough in the skillet.
  10. Cook for about 3-4 minutes on each side until golden brown and crispy, brushing with more oil if needed.
  11. Repeat the process with the remaining dough pieces.
  12. Serve warm, drizzled with olive oil or sprinkled with sugar, if desired.
