- All-purpose flour - 250 grams
- Semolina - 50 grams
- Warm water - 150 ml
- Salt - 1 teaspoon
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large bowl, combine the all-purpose flour, semolina, and salt. Gradually add warm water while mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
- In a small bowl, mix the olive oil, ground cumin, ground coriander, paprika, black pepper, and chopped parsley to create a spice oil.
- Divide the rested dough into four equal pieces. Roll each piece into a thin circle, about 20 cm in diameter.
- Brush each circle with the spice oil mixture, then fold the edges towards the center to create a square or rectangle. Flatten gently.
- Heat a non-stick skillet over medium heat. Cook each msemen for about 2-3 minutes on each side until golden brown and crispy.
- Serve warm with extra spice oil for dipping or alongside your favorite vegan toppings.
