Ingredients

  • Almond flour - 200 grams
  • Coconut flour - 50 grams
  • Warm water - 150 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, sea salt, and black pepper.
  2. Gradually add the warm water and 1 tablespoon of olive oil. Mix until a soft dough forms.
  3. Knead the dough for about 5 minutes on a clean surface until smooth.
  4. Incorporate the chopped herbs (parsley, cilantro, and mint) into the dough, mixing well.
  5. Divide the dough into 4 equal pieces and shape each piece into a ball.
  6. Flatten each ball into a thin disk, about 1/2 cm thick.
  7. Heat a non-stick skillet over medium heat and add the remaining tablespoon of olive oil.
  8. Cook each disk for 3-4 minutes on each side or until golden brown and slightly crispy.
  9. Remove from the skillet and keep warm while cooking the remaining disks.
  10. Serve warm, optionally drizzled with olive oil or alongside your favorite dips.
