Ingredients
- Almond flour - 200 grams
- Coconut flour - 50 grams
- Warm water - 150 ml
- Olive oil - 2 tablespoons
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a mixing bowl, combine the almond flour, coconut flour, sea salt, and black pepper.
- Gradually add the warm water and 1 tablespoon of olive oil. Mix until a soft dough forms.
- Knead the dough for about 5 minutes on a clean surface until smooth.
- Incorporate the chopped herbs (parsley, cilantro, and mint) into the dough, mixing well.
- Divide the dough into 4 equal pieces and shape each piece into a ball.
- Flatten each ball into a thin disk, about 1/2 cm thick.
- Heat a non-stick skillet over medium heat and add the remaining tablespoon of olive oil.
- Cook each disk for 3-4 minutes on each side or until golden brown and slightly crispy.
- Remove from the skillet and keep warm while cooking the remaining disks.
- Serve warm, optionally drizzled with olive oil or alongside your favorite dips.
