- Chickpeas - 200 grams, cooked
- Olive oil - 3 tablespoons
- Honey - 1 tablespoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large mixing bowl, combine olive oil, honey, cumin, cinnamon, paprika, salt, black pepper, minced garlic, and lemon juice to create a marinade.
- Add the sliced zucchini, bell peppers, onion, carrot, and cooked chickpeas to the marinade. Toss until all vegetables are well coated. Allow to marinate for at least 15 minutes.
- Preheat the grill or BBQ to medium-high heat.
- Thread the marinated vegetables and chickpeas onto skewers, alternating between different veggies for a colorful presentation.
