  • Carrot - 1 medium, sliced
  • Chickpeas - 200 grams, cooked
  • Olive oil - 3 tablespoons
  • Honey - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large mixing bowl, combine olive oil, honey, cumin, cinnamon, paprika, salt, black pepper, minced garlic, and lemon juice to create a marinade.
  2. Add the sliced zucchini, bell peppers, onion, carrot, and cooked chickpeas to the marinade. Toss until all vegetables are well coated. Allow to marinate for at least 15 minutes.
