Ingredients
- Lamb shoulder - 300 grams, cut into cubes
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Honey - 2 tablespoons
- Almonds - 30 grams, sliced
- Ras el Hanout spice mix - 1 tablespoon
- Cinnamon stick - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 ml
- Fresh coriander - for garnish
Steps
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the cubed lamb to the pot, along with the ras el hanout, salt, and black pepper. Sear the lamb on all sides until browned, about 5-7 minutes.
- Pour in 500 ml of water and add the cinnamon stick. Bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes until the lamb is tender.
- While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- After 30 minutes, add the honey and sliced almonds to the lamb mixture. Stir well to combine and cook for an additional 10 minutes uncovered.
- In a separate pot, cook the rinsed rice according to package instructions, typically using 300 ml of water and a pinch of salt. Cook until the rice is fluffy and the water is absorbed, about 15 minutes.
- Once the lamb is tender and the sauce has thickened, remove the cinnamon stick and serve the lamb over the rice. Garnish with fresh coriander.
