Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Honey - 2 tablespoons
  • Almonds - 30 grams, sliced
  • Ras el Hanout spice mix - 1 tablespoon
  • Cinnamon stick - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 ml
  • Fresh coriander - for garnish

Steps

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add the cubed lamb to the pot, along with the ras el hanout, salt, and black pepper. Sear the lamb on all sides until browned, about 5-7 minutes.
  4. Pour in 500 ml of water and add the cinnamon stick. Bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes until the lamb is tender.
  5. While the lamb is cooking, rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  6. After 30 minutes, add the honey and sliced almonds to the lamb mixture. Stir well to combine and cook for an additional 10 minutes uncovered.
  7. In a separate pot, cook the rinsed rice according to package instructions, typically using 300 ml of water and a pinch of salt. Cook until the rice is fluffy and the water is absorbed, about 15 minutes.
  8. Once the lamb is tender and the sauce has thickened, remove the cinnamon stick and serve the lamb over the rice. Garnish with fresh coriander.
