Ingredients

  • Chickpeas - 200 grams, soaked overnight
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 large, diced
  • Raisins - 50 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Ginger - 1 teaspoon, ground
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until translucent (about 5 minutes).
  3. Stir in the diced carrot and zucchini, cooking for another 5 minutes.
  4. Add the diced tomato, soaked chickpeas, vegetable broth, cinnamon, cumin, ginger, turmeric, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the chickpeas are tender.
  6. In the last 5 minutes of cooking, add the raisins and stir well.
  7. Remove from heat and let sit for a few minutes before serving.
  8. Serve warm, garnished with fresh cilantro.
