- Chickpeas - 200 grams, soaked overnight
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomato - 1 large, diced
- Raisins - 50 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Ginger - 1 teaspoon, ground
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped red onion and minced garlic, sautéing until translucent (about 5 minutes).
- Stir in the diced carrot and zucchini, cooking for another 5 minutes.
- Add the diced tomato, soaked chickpeas, vegetable broth, cinnamon, cumin, ginger, turmeric, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the chickpeas are tender.
- In the last 5 minutes of cooking, add the raisins and stir well.
- Remove from heat and let sit for a few minutes before serving.
- Serve warm, garnished with fresh cilantro.
